COOKING RECIPES: Herring

Japanese BBQ eel style "Herring Donburi (with rice)"
Serving 2
INGREDIENTS
Herring 6 fillets
4 Tbs Flour
2 Tbs Cooking oil
Mixed Sauce: 2 Tbs Soy sauce + 1 Tbs Sugar + 1 Tbs Vinegar + 1 Tbs MIRIN (Japanese sweet cooking rice wine)
GARNISH (if desired)
Shredded ginger or SUSHI ginger
Cayenne pepper
COOKING
Fillet the herring. Remove the belly bones.
Coat the fish lightly with the flour.
In a small bowl mix the sauce ingredients.
Put some cooking oil in a medium heated frying pan, then place the coated fish the skin down to cook.
When the skin turns golden, turn it over, then cook the other side.
When the fish is almost cooked, add the mixed sauce into the frying pan, then simmer it until the sauce becomes thick and shiny.
Remove the pan from the heat, otherwise it will keep cooking and the sauce will disappear.
Put some cooked rice in a bowl, then drizzle some of the sauce from the pan on the rice.
Place the cooked herring on the rice and decorate with shredded or SUSHI ginger and touch of cayenne pepper. Enjoy!
